Mint Soup
Ingredients:
- 2 cups fresh mint leaves, packed (plus extra for garnish)
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 medium potatoes, peeled and diced
- 4 cups vegetable or chicken broth
- 1 cup heavy cream or coconut milk (optional)
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh lemon juice (optional, for brightness)
