Mint soup

Here's a refreshing mint soup recipe that’s perfect for spring or summer:

Mint Soup

Ingredients:

  • 2 cups fresh mint leaves, packed (plus extra for garnish)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 medium potatoes, peeled and diced
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream or coconut milk (optional)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh lemon juice (optional, for brightness)

Instructions:

  1. Sauté the Onion and Garlic: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for another minute.

  2. Cook the Potatoes: Add the diced potatoes to the pot and pour in the broth. Bring to a boil, then reduce the heat and simmer until the potatoes are tender, about 15-20 minutes.

  3. Add Mint: Remove the pot from heat and stir in the fresh mint leaves. Allow the mixture to cool slightly.

  4. Blend the Soup: Use an immersion blender to puree the soup until smooth. If you don’t have an immersion blender, carefully transfer it in batches to a regular blender.

  5. Add Cream and Season: Return the blended soup to the pot (if using a regular blender) and stir in the heavy cream or coconut milk, if desired. Heat gently, but do not boil. Season with salt, pepper, and a splash of lemon juice if desired.

  6. Serve: Ladle the soup into bowls and garnish with additional mint leaves.
